According to Google, the transition comes after various updates to Gemini, including Deep Research and other improvements. Users will receive an official date soon, but those still using Assistant will begin seeing upgrade prompts in the coming months.

There are a few exceptions such as devices running Android 9 or earlier with less than 2GB of RAM will retain the old Assistant experience.
